Tarragon Aioli

Ingredients for 4 servings:

  • 1 large egg(s)
  • 150 ml sunflower oil
  • 2 clove(s) garlic, chopped
  • ½ tsp mustard, medium hot
  • ½ tsp salt
  • 2 tsp lemon juice
  • 5 ½ tsp tarragon, dried

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine all ingredients, except the tarragon, in a tall bowl. Place the immersion blender in the bowl and blend until a mayonnaise consistency forms. Do not move the immersion blender. Then stir 5 1/2 teaspoons of dried tarragon into the mayonnaise.
