Meissen Quark Cake

Ingredients for 1 servings:

  • 175 g butter
  • 6 egg yolks
  • 300 g sugar
  • 1 tsp organic lemon peel, finely grated
  • 3 tbsp lemon juice
  • 1 kg dry quark
  • 100 g semolina
  • 1 tbsp flour
  • 1 packet of baking powder
  • 6 egg whites
  • 1 pinch of salt
  • Fat for the mold
  • 30 g butter
  • Powdered sugar, for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cream the butter until fluffy. Gradually add the egg yolks, sugar, lemon zest, and lemon juice and mix. Combine the quark with the semolina, flour, and baking powder and stir into the egg yolk mixture. Beat the egg whites with a pinch of salt until stiff peaks form and fold into the mixture. Grease a 28 cm springform pan and pour in the batter. Bake the cake in a preheated oven at 180°C for 55-65 minutes. While still hot, brush with melted butter and dust with powdered sugar.
