Pineapple Tiramisu

Ingredients for 6 servings:

  • 100 g ladyfingers
  • 100 ml pineapple juice
  • 4 slices of pineapple
  • 250 g mascarpone
  • 250 g quark (semi-skimmed quark)
  • 120 g sugar
  • ½ packet of vanilla sugar
  • 200 ml cream
  • possibly cocoa powder

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Arrange the sponge fingers in a shallow dish and pour the pineapple juice over them. Cut the pineapple slices and arrange them on the sponge. Then mix the mascarpone, quark, sugar, and vanilla sugar well. Whip the cream until stiff and fold into the mascarpone mixture. Spread the mixture over the sponge fingers and refrigerate for about 2 hours. Sprinkle with chocolate powder just before serving, if desired.
