Ingredients for 3 servings:
- 3 ports. Spareribs (baby back ribs), approx. 300 – 400 g per portion
- 25 g BBQ rub (Magic Dust)
- 25 ml BBQ sauce
- 5 ml maple syrup
- 80 ml apple juice
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 6 hours; Total time approx. 6 hours 45 minutes
Remove the silver skin from the ribs and sprinkle them with BBQ rub on both sides. Wait 30 minutes on each side until the rub is thoroughly moistened. Set the smoker to 120 degrees Celsius. Place the ribs on the grill using a rib holder and smoke indirectly for 3 hours. Then pour the apple juice into an ovenproof dish with a rack, place the ribs on the rack, and cover the dish with aluminum foil. Cook indirectly for 2 hours at 120 degrees Celsius. Carefully remove the ribs from the ovenproof dish, glaze them with a mixture of barbecue sauce and maple syrup, and return them to the grill. Grill indirectly for 1 more hour at 120 degrees Celsius. If necessary, glaze a second time after 30 minutes.
