Zottel’s golden potatoes – a side dish

This recipe is truly simple. I think it’s especially well-suited as a side dish for Mediterranean cuisine. Peel small potatoes. Spread flour on a plate. Roll each potato individually in flour, ensuring a thin layer adheres. Add the coated potatoes to simmering fat (pot/deep fryer) and fry until golden brown. After about 10 minutes, remove the potatoes—check for firmness if necessary—and drain. Season with salt and serve.
