Cheese and tomato salad

Ingredients for 4 servings:

  • 400 g cheese, Valbrie Royal (soft cheese)
  • 500 g tomatoes
  • 3 tbsp vinegar
  • 6 tbsp wine, white, dry
  • 9 tbsp oil (sunflower oil)
  • 2 tsp sugar
  • some salt and pepper
  • 1 bunch fresh basil, chopped
  • 2 bunch spring onions

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Mix the vinegar, white wine, oil, sugar, salt, pepper, and basil. Chop the spring onions and add them. Slice the cheese and let it marinate for an hour and a half. Slice the tomatoes, arrange the tomatoes and cheese alternately on a plate or platter, and pour the marinade over them. Serve with fresh baguette or ciabatta.
