Ingredients for 1 servings:
- 175 g sugar
- 2 eggs
- 1 pinch of vanilla powder
- 100 g butter, semi-skimmed
- 3 lemon(s), untreated, zest and juice
- e.g. buttermilk
- 300 g flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Instructions

Preheat the oven to 180°C. Beat the eggs with sugar, vanilla, and grated lemon zest until frothy. Stir in the butter until smooth. Weigh the lemon juice and add buttermilk to a total of 250g, then stir in. Mix the flour, salt, baking powder, and baking soda and quickly fold into the batter. Pour into muffin cups. Bake at 180°C (top/bottom heat) for about 25 minutes (test with a toothpick).
