Green mashed potatoes

Ingredients for 2 servings:

  • 200 g leaf spinach
  • 4 large potatoes, floury, finely diced
  • 125 ml milk, hot
  • 100 g ham, cut into very fine cubes
  • e.g. salt and pepper
  • some nutmeg, freshly grated
  • 1 tsp, heaped butter, softened

Quick and easy to prepare

The leaf spinach tastes particularly good fresh, but the dish is also easy to prepare with frozen. Collapse the spinach in a little boiling, lightly salted water and then drain it in a sieve. Squeeze the spinach lightly and puree it with a little salt, pepper, and about 1 tablespoon of milk using a hand blender. Boil the potatoes in lightly salted water for about 12 minutes, then drain and steam gently on the switched off hob with the lid on, for a maximum of 1 minute. Finely mash the potato cubes with the remaining milk, add the butter, then mix the mash with the pureed spinach very well. Season everything again with salt, pepper, and a little freshly grated nutmeg. Meanwhile, spread the ham cubes on a plate and roast covered in the microwave on high for 2 minutes. Arrange the green mashed potatoes on two plates and scatter the ham cubes on top. We like to eat this with a crispy fried egg.
