Ingredients for 1 servings:

  • 750 ml white wine
  • 3 tbsp orange juice
  • 1 tbsp lemon juice
  • 220 g sugar
  • 3 carnations
  • 1 stalk(s) cinnamon
  • 1 tbsp cardamom pod(s), seeds only
  • ¼ tsp nutmeg
  • 1 cm ginger, sliced
  • 1 liter red wine

Instructions

Working time approx. 15 minutes; Rest period approx. 5 days; Total time approx. 5 days 15 minutes

traditional Swiss spiced wine

Bring the white wine and all ingredients except the red wine to a boil and stir until the sugar has dissolved. Then remove the pot from the heat and let it cool slightly. Add the red wine and let it steep, covered, for two days. After two days, strain, pour into clean bottles, and seal. Let it rest in a cool, dark place for about five days before use. Hypocras can be enjoyed hot or cold and goes well with Christmas Stollen, Basler Leckerli (traditional sweets), and red wine spice sticks. This spiced wine is traditionally consumed in Basel in the hour before and after New Year’s Eve. It will keep for about four weeks if stored in a cool, dark place.
