Cold sauerkraut soup

Ingredients for 2 servings:

  • 500 ml chicken broth, clear
  • 1 onion(s), chopped
  • 1 tbsp butter
  • 1 clove(s) garlic
  • 200 g sauerkraut, fresh
  • Paprika powder, sweet
  • some caraway, ground
  • 1 pinch(s) of cayenne pepper
  • 1 tsp flour
  • 1 red bell pepper(s), very finely chopped
  • 100 g noodles (soup noodles), boiled
  • salt and pepper
  • Maggi (liquid seasoning)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the noodles. Sauté the finely chopped onion in butter. Press in the garlic clove and add the finely chopped sauerkraut. Sprinkle with paprika, a little ground caraway, a little cayenne pepper, and the flour, and sauté briefly. Then add a very finely chopped red bell pepper. Deglaze with the broth. Simmer for 15 minutes. Finally, add the boiled soup noodles to the soup. Season to taste with salt, pepper, and liquid seasoning.
