Ingredients for 8 servings:
- 8 small quinces, soft-boiled (250 g each)
- 200 g rock sugar, white (also crumb sugar, tea sugar)
- 40 g butter
- 4 vanilla pods

similar to baked apple
Zest the quinces and rinse if necessary. Using a sturdy apple corer or a sharp knife, cut out a round shape in the center. Stud the outside of the quinces with rock candy. Place about 1 teaspoon of butter, 1 tablespoon of rock candy, and 1/2 a split vanilla pod into the center of each quince. Wrap each quince individually in aluminum foil and place on a baking sheet. Roast in an oven preheated to 160°C (140°C fan/gas mark 2) for 60-80 minutes until soft.
