Ingredients for 4 servings:
- 4 pork chops
- 1 can hearts of palm, 220 g drained weight
- 250 ml homemade hollandaise sauce
- 2 tbsp sambal oelek
- 2 tbsp tomato ketchup
- 20 ml white wine
- 1 tsp oil
- salt and pepper
- Paprika powder

Drain the hearts of palm and cut into finger-thick slices. For the sauce, mix the homemade hollandaise sauce with sambal oelek, ketchup, and white wine. Depending on how spicy you like it, you can add more or less sambal oelek to the sauce. A few chili flakes also work well if you like it hotter. After mixing, bring to a boil either on the stovetop or in the microwave and season to taste. Season the chops with salt, pepper, and paprika, then fry in oil for about 2-3 minutes on each side. Remove the meat from the pan, distribute the hearts of palm evenly over the meat, and pour the hot sauce over it. We serve it with fries or potato wedges. If you want to add a little extra flair to the dish, take one Granny Smith, first cut it in half, remove the core, and cut it into thin wedges. Then fry these on both sides in the oil from the chops. It’s not everyone’s taste, but I think the fruity flavor goes quite well with the spicy sauce. It also goes great with a green salad.
