after Hildegard of Bingen

Mix the yeast and sugar in a cup of lukewarm buttermilk. Sift the two flours into a bowl, make a well, and add the dissolved yeast. Mix with a little flour and gradually stir in the remaining buttermilk and salt. Knead the dough well and let it rise for an hour, until it has doubled in size. Knead again and shape it into a loaf. Let it rise for 15 minutes and place it on a greased baking sheet. (You can also use a bread pan, of course.) Bake at 220°C for 50 minutes. You can also add seeds! Truly delicious and, above all, healthy bread!
