- 3 eggs
- 25 g butter
- 2 slices of bacon
- 1 tsp chives
- 1 tbsp crème fraîche
- salt and pepper

Simple and low carb/keto
Fry the bacon in a pan (without fat) according to your preference. I prefer to prepare it in the microwave. To do this, place the bacon strips on a plate lined with a paper towel and cover with another layer of paper towel. Cook in the microwave until the bacon is golden brown and crispy. This method has the advantage of absorbing all the excess fat, eliminating any annoying splatters. Crack the eggs into a pan and add the butter. Mix over medium heat. When the egg just begins to set, remove from the heat and continue stirring. When it stops setting, add more heat. Repeat this process until the desired consistency is almost reached. Then season with salt and pepper, and stir in a tablespoon of crème fraîche and some finely chopped chives. The scrambled eggs are ready when they have a soft, fluffy texture. It’s important not to stop stirring and not let them get too dry. Then serve the scrambled eggs either on a toasted slice of bread or directly on the plate with the bacon.
