Ingredients for 4 servings:
- 4 large apples
- ½ lemon(s), juice
- 4 tsp jelly (quince or blackcurrant jelly)
- 150 g cream cheese
- 2 egg yolks
- 4 tbsp almonds, ground
- 1 packet of vanilla sugar (Bourbon)
- 2 tbsp sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the tops off the apples, leaving the stems on if present. Using a melon baller or a small, sharp kitchen knife, generously scoop out the cores to create enough space for the filling. Mix the lemon juice with the jelly and fill the apple cavities. Mix the quark, egg yolks, almonds, vanilla sugar, and sugar. Divide the mixture between the apples. Place them in a buttered gratin dish and place the tops on top. Bake the apples in an oven preheated to 200°C (400°F) on the second lowest rack for 15-20 minutes, depending on the variety. Serve hot or lukewarm. Double the batch and serve as a small sweet meal with a side of soup.
