Carrot – persimmon – salad

Ingredients for 2 servings:

  • 3 large carrots, grated
  • 1 persimmon, very finely chopped
  • 1 tbsp honey, liquid
  • 1 dash of freshly squeezed lemon juice
  • 1 dashes sesame oil or other nut oil
  • 2 pinch(s) pepper, black
  • 1 pinch(s) cinnamon powder, according to taste
  • 1 pinch of salt
  • 2 walnuts, coarsely chopped

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the carrots and persimmon in a bowl. Add the honey, oil, lemon juice, and pepper, mix, and season with a little salt and perhaps a pinch of cinnamon. Sprinkle the walnuts on top. It has a sweet/tart flavor.
