Ingredients for 4 servings:
- 500 g spelt flour
- 350 ml water, warm
- 30 g yeast
- 2 tsp salt
- 1 tsp honey
- 1 tbsp vinegar
- 25 g butter

Dissolve the yeast in water and knead with the wholemeal spelt flour to form a dough. Then add the honey and vinegar. Knead at low speed for about 4 minutes, then at medium speed for another minute. Towards the end, add the salt and butter and finish kneading the dough. Cover the dough with cling film and let it rise in a cooler place for about 120 minutes. Then divide the dough into two pieces and let it rest for another 10 minutes. After this time, shape it into long, thin logs. Place the two pieces on a baking sheet lined with baking paper and let it rest for about 40 minutes. Then cut diagonally with a knife. Place the baguette in the oven at 220°C (preheated) and bake for 10 minutes, then reduce the temperature to 180°C. Place a container of water next to it and bake at 180°C (350°F). The baking time is approximately 30-35 minutes.
