Ingredients for 2 servings:

  • 200 g wholegrain pasta
  • salt water
  • 500 g mixed vegetables (e.g. cauliflower, broccoli, carrots)
  • 5 tbsp pesto, preferably homemade
  • 50 g Parmesan

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring a large pan of water to a boil, add salt, and add the pasta. Meanwhile, clean and chop the vegetables (you can also use frozen vegetables). After 10 minutes, add the vegetables to the pasta, then drain after another 10-15 minutes. Mix with the pesto and sprinkle with the Parmesan cheese.
