Ingredients for 4 servings:
- 700 g vegetables, e.g. potatoes and pumpkin, zucchini, carrots etc.
- 1 onion(s)
- 2 tbsp flour
- 3 eggs
- salt and pepper
- nutmeg
- 6 tbsp oil for frying
- 250 g quark
- 5 tbsp sour cream
- 1 bunch of chives
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel the vegetables and coarsely grate them. Peel and dice the onions. Mix the vegetables with the flour and eggs and season with salt, pepper, and nutmeg. Fry the vegetable batter in a pan with oil for 2-3 minutes per side until crispy brown. For the dip, combine the quark with sour cream, chives, pepper, and salt and serve with the rösti. This is also a great dish to cook with children.
