Potato casserole with Parmesan crust

Ingredients for 2 servings:

  • 400 g potatoes, waxy
  • salt water
  • 200 g whipped cream
  • 40 g Parmesan, grated
  • 40 g breadcrumbs
  • 2 large eggs
  • some salt and pepper

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 50 minutes

Peel and wash the potatoes, slice them, and cook them in salted water for about 20 minutes until soft. Then transfer them to a baking dish. Preheat the oven to 200°C (top/bottom heat). Beat the eggs and pour in the cream. Season with salt and pepper and pour over the potatoes. Mix the Parmesan cheese with the breadcrumbs and sprinkle them over the casserole. Return to the oven for about 30 minutes, until the egg mixture has set.
