Mediterranean cauliflower casserole

Ingredients for 2 servings:

  • 1 cauliflower
  • 1 beefsteak tomato(s)
  • 20 black pitted olives
  • 2 tbsp capers
  • 2 tbsp parsley, chopped
  • 2 garlic cloves
  • 2 chili peppers, mild
  • 2 tbsp olive oil
  • 2 tbsp Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the cauliflower into small florets, wash, and cook for 10 minutes, then drain. Meanwhile, peel and finely chop the garlic. Deseed and finely chop the chili peppers. Dice the tomatoes. Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Place the cauliflower in a baking dish and mix in all the other ingredients. Bake in the oven for 20 minutes. Immediately sprinkle with Parmesan cheese. Serve with baked potatoes.
