Coconut Potato Gratin

Ingredients for 2 servings:

  • 5 potatoes
  • 200 ml coconut milk
  • 100 ml apple juice
  • 100 g Parmesan, grated
  • 1 tbsp breadcrumbs
  • 1 pinch of nutmeg
  • 1 pinch(s) thyme, dried, fresh is better
  • 1 pinch of marjoram, dried, fresh is better
  • salt and pepper
  • 2 cloves garlic

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Slice the peeled potatoes using a cucumber slicer. Immediately slice them into a buttered, breadcrumb-coated, ovenproof dish. Combine the apple juice, coconut milk, herbs, freshly ground pepper, salt, crushed garlic, and ground caraway seeds, if desired, and pour over the potatoes. Bake in a preheated oven at approximately 200°C (top/bottom heat) for approximately 40 minutes. Just before the end of the cooking time, sprinkle with Parmesan cheese and let it melt. Tip: You can also toss the potatoes with apples, also sliced ​​using a cucumber slicer.
