Peel the apples and cut into fine pieces. Heat the apple cubes with lemon juice in a saucepan and cook for about 5 minutes, stirring constantly, until the apples are nice and soft and will later fall apart. Peel the figs and cut into fine pieces, then fold in the sugar and cinnamon. Bring everything to a boil and let it bubble for about 4 minutes according to the package instructions. Season to taste with Marsala. If necessary, puree with a hand blender before the gelling process begins. Pour into clean jars while hot and invert the jars after sealing. Tip: This recipe also works with canned figs. Unfortunately, they don’t have this beautiful color. Add a little dark red wine while cooking to give them a red color. Important: Canned figs are sweetened, so you may need to use a different 2:1 or 3:1 gelling sugar or add more lemon juice.
