Ingredients for 2 servings:
- 500 ml milk
- 2 tbsp, heaped sugar
- 5 tbsp, heaped breadcrumbs or flour
- 5 tbsp, heaped durum wheat semolina
- 2 eggs
- 1 pinch of turmeric
- 1 pinch of cinnamon

Swabian cuisine – simple and vegetarian
Preheat the oven to 180°C (top/bottom heat). Place the milk, sugar, breadcrumbs, durum wheat semolina, eggs, turmeric, and cinnamon in a clean bowl. Mix thoroughly with a whisk until there are no lumps (in good Swabian dialect: oimal dureschla). One minute is enough! Then pour the mixture into a heat-resistant container without a lid that is tall enough (yes, the mush will expand quite a bit over time – not that you’ll have to clean your oven a lot). The container should be no more than half full. Place the container in the oven – regardless of whether it’s already reached temperature. After about an hour, check it occasionally. It’s ready when the surface is a nice golden brown. Pickled fruit, vanilla sauce, or ice cream go very well with this. Tip: Of course, I let everyone have their own individual tastes. My grandmother usually served it with sour cherries. A quick note: My grandmother always used an enamel pot. If anyone still has one, that would be ideal. My mom always made it in a glass casserole dish.
