Ingredients for 7 servings:
- 4 eggs, separated
- 250 ml water, hot
- 100 g sugar
- 1 packet of vanilla sugar
- 400 g flour
- 1 tsp baking powder
- 500 ml milk
- Fruit of your choice
- Clarified butter
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Beat the egg yolks with hot water, sugar, and vanilla sugar until frothy. Fold in 250g of flour and stir briefly. Then stir in the milk and add the remaining flour with the baking powder. Let the batter rest for an hour. Beat the egg whites until stiff and fold into the batter. Add prepared fruit, if desired. Fry in batches on both sides in a pan with clarified butter until golden brown.
