Ingredients for 1 servings:
- 200 g butter or margarine
- 130 g sugar
- 1 packet of vanilla sugar
- 4 eggs
- 125 g spelt flour type 630
- 125 g wholemeal spelt flour
- 2 tsp baking powder
- 125 ml red wine or mulled wine
- 2 tsp cocoa powder
- 1 tsp cinnamon powder
- 100 g dark chocolate sprinkles
- n. B. Icing sugar or chocolate coating for decoration
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Weigh all ingredients and set aside. Place flour, cocoa, cinnamon, and baking powder in a bowl. Cream butter or margarine until light and fluffy. Gradually add sugar, vanilla sugar, and eggs, beating each egg for about 1 minute. Sift the dry ingredients over the batter and mix evenly with the red wine or mulled wine. Finally, fold in the chocolate sprinkles. Pour the batter into a greased and floured loaf pan. Bake in a preheated oven at 170°C (top/bottom heat) for about 50-60 minutes. Do the skewer test to check for doneness. Extend the baking time if necessary and reduce the temperature slightly if the cake is getting too dark. Allow the cake to cool completely and, if desired, dust with powdered sugar or cover with chocolate coating. The cake tastes best after storing for 1-2 days.
