Ingredients for 1 servings:

  • 4 dl buttermilk
  • 3 eggs
  • 250 g flour
  • ½ tsp baking soda, or baking powder
  • 1 tbsp sugar
  • ¼ tsp salt, coarse
  • 50 g butter
  • possibly raisins
  • powdered sugar
  • jam

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

To bake, you need a pan with holes like those for gateaux (typically 9 holes). Turn the pans with a wooden skewer. Mix buttermilk, egg yolks, flour, baking soda, sugar, and salt in a mixer at high speed for 2 minutes. Cover and let rest for 30 minutes. Beat the egg whites until stiff peaks form and carefully fold in. The batter can be placed in a jug so that you can pour it into the pan. Melt the butter. Heat the pan on the stovetop, add a little butter to the holes, and fill 3/4 of the batter with batter. Bake at medium heat and turn with a wooden skewer. Keep warm in the oven or eat straight from the pan with powdered sugar or jam. Tip: Turn the pan over for the first time when the batter has formed a crust and is starting to brown. There should still be enough liquid batter left to bake the other round so the Æbleskiver are also round. Turn it over regularly after that. Raisins are also very typical in Æbleskivern, and can be added to taste. Both are delicious, and we always bake one batch with and one without raisins.
