Cut the meat into approximately 2 cm thick slices, rub with salt and mustard. Wrap the ham around the pieces of meat. Grease a baking dish, add the onion and meat, scatter a few knobs of butter over the meat, and bake for about 30 minutes at 200°C. First roughly crush the Gorgonzola, then mix with the cream to form a thick paste (add a little more cream if necessary) and season with pepper.
