Ingredients for 2 servings:

  • 75 g poultry sausage
  • 1 small can of peach(s)
  • 2 tbsp mango chutney
  • salt and pepper
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 1 package of burger patties (vegetable burgers), 2 pieces
  • 50 g cashew nuts, unsalted
  • 2 tbsp salad mayonnaise
  • 1 tsp tomato paste
  • 2 pretzel rolls without salt
  • curry powder
  • 4 lettuce leaves
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Remove the sausage skins and slice the bologna. Pour the peaches into a sieve, drain well, and cut into cubes. Mix the apricot and mango chutney together and season with salt and pepper. Wash and drain the bell peppers, then cut 4 rings off each. Heat the oil in a pan and fry the vegetable burgers according to the package instructions, turning occasionally. Meanwhile, chop the nuts. Mix together the mayonnaise, tomato paste, and nuts. Season with curry powder. Halve the buns horizontally. Wash the lettuce leaves, pat dry, and spread them on the undersides of the buns. Add the peach cubes and apricot/mango mixture. Place the vegetable burgers on top, top with bologna, and spread with curry mayonnaise. Add the bell pepper rings and finally the top half of the bun.
