Ingredients for 3 servings:

  • 3 tbsp oil for frying
  • 3 m.-sized onion(s)
  • salt and pepper
  • 1 tbsp curry powder
  • 500 g pork goulash or turkey
  • 1 can kidney beans
  • 1 can of corn (approx. 330 g)
  • 4 m.-sized potatoes
  • Vegetable broth or meat broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Meat – Potatoes – Red Beans – Curry

Heat the oil in a lidded ovenproof pot. Sauté the chopped onions. Add salt, pepper, and curry powder. Add the diced meat (you can also brown it first) and do not stir. Layer the red beans, corn, and finally the diced potatoes. Pour the broth over everything. Cover and cook for 15 minutes. Cover and cook in an oven preheated to 180°C (top/bottom heat) for about 1.5 hours.
