Ingredients for 1 servings:
- 950 g sweet and sour apples
- 3 limes, the juice
- 25 g freshly grated ginger
- 1 shot of white rum
- 1 tbsp vanilla sugar, preferably homemade or at least bourbon
- 350 g sugar
- 1 pkt. Gelfix or gelling sugar (3:1) as required

Working time approx. 30 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 33 minutes

Peel and grate the apples, stir in the lime juice, ginger, vanilla sugar, and rum. Mix the sugar with the gelling agent and stir into the apple mixture in a tall saucepan. Bring to a boil over high heat, simmer for 3 minutes, stirring constantly, and then pour into prepared jars. Seal with twist-off lids and leave the jars on the lids for 10 minutes. This process also works with regular gelling sugar; in this case, simply follow the instructions and quantities on the packaging.
