Airy pancakes

Ingredients for 2 servings:

  • 250 g flour
  • ¼ liter of milk
  • ¼ liter of carbonated mineral water
  • 3 eggs
  • 1 pinch of salt
  • 1 packet of baking powder

Instructions

Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 40 minutes

Without sugar

Separate the egg yolks from the egg whites. Place the flour and baking powder in a bowl and make a well in the center. Pour the egg yolks and salt into the well and mix with the flour. Gradually add the sparkling water and milk. Beat with a whisk until fluffy (do not use a mixer) until air bubbles form. Cover the batter with a cloth and let it rest at room temperature for 30 minutes. Beat the egg whites until stiff peaks form and carefully fold in with a wooden spoon. Heat a pan with oil and add the batter a spoonful at a time. Cook until golden brown. Tip: Sprinkle the pancakes with sugar/cinnamon or top with ham and cheese in the oven. Soy milk can also be used instead of milk.
