Ingredients for 2 servings:

  • 250 g quark
  • 100 g sugar
  • 1 packet of vanilla sugar
  • ½ lemon(s), juice
  • 250 g raspberries, fresh or frozen
  • 200 ml cream

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix the quark, sugar, vanilla sugar, and lemon juice. Set aside a few raspberries for decoration. Carefully mix the remaining raspberries into the mixture. Whip the cream until stiff peaks form and gently fold in. Although fresh raspberries may taste better, frozen raspberries are better for this process. If using frozen raspberries, let them rest a little longer before serving so they don’t become too hard. This resting time should be in the refrigerator. The quantities given are more suitable for lovers of medium to large desserts.
