Ingredients for 6 servings:
- 6 eggs
- 1 cup(s) sugar
- 2 cups flour
- 2 cup(s) rice pudding (half-cooked), maybe a little more
- 2 tsp cardamom
- 1 ½ liters of milk
- 1 ½ tsp salt

The quintessential Åland specialty. It’s somewhat reminiscent of Aachen rice cakes.
Combine the eggs, sugar, salt, and cardamom in a bowl and mix. Stir in the flour first, then the rice pudding and the milk. Pour the batter into a heatproof pan or round cake tin and bake at 220°C for about 25 minutes. The pancake should be golden brown and firm. Serve with plum or prune jam and whipped cream. Country of origin: Åland is an autonomous archipelago belonging to Finland, but the only language spoken there is Swedish. Åland is demilitarized, sells duty-free goods, has its own license plates, and issues its own postage stamps.
