Ingredients for 3 servings:

  • 1 kg clams
  • 100 g garlic, young (ajo tierno)
  • 1 jar white wine, dry
  • some olive oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Clams in a white wine broth with young garlic

Add a little olive oil to a suitably large pot and lightly sauté the young garlic over medium heat; it shouldn’t brown. Season with salt and pepper, then add the wine and the mussels and cover the pot briefly. When the mussels open, stir gently with a wooden spoon. Serve on a plate with baguette. Note: Discard any mussels that don’t open.
