Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 150 g brown sugar
  • 2 eggs, whisked
  • 1 orange(s), grated peel
  • 100 g almonds, whole, peeled and lightly roasted
  • Flour, for dusting

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

for approx. 40 cookies

Lightly dust a baking tray with flour. Sift the flour, baking powder, and salt into a bowl. Add the sugar, eggs, and orange zest and knead everything into a dough. Knead in the roasted, whole almonds. Form the dough into a ball, divide it in half, and shape each half into a 4cm thick log. Place this on the floured baking tray and bake in a preheated oven at 180°C for 10 minutes. Remove from the oven and let cool for 5 minutes. Using a serrated knife, cut both logs diagonally into 1cm thick slices. Arrange the slices on the baking tray and bake for a further 15 minutes, until lightly golden brown. Transfer to a wire rack until cool and crispy.
