Almond cake à la Heidrun

Ingredients for 1 servings:

  • 100 g butter
  • 70 g sugar
  • 1 egg(s)
  • 180 g flour
  • 2 tsp baking powder
  • Fat for the mold
  • 200 g butter
  • 200 g sugar
  • 200 g almonds, ground
  • 5 eggs, separated
  • ½ bottle of bitter almond flavor
  • possibly chocolate, melted

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

First, cream together the butter, sugar, and egg until fluffy. Add the sifted flour (I always use cake flour for baking) and the baking powder to the mixture and mix well. Pour the batter into a greased cake tin. For the topping, beat the egg whites until stiff peaks form. Beat the egg yolks, butter, and sugar until fluffy. Add the ground almonds to the mixture and 1/2 bottle of bitter almond flavoring. Mix everything well and finally fold in the stiff egg whites. Spread the mixture into the tin and bake on the middle rack at 175–180°C (top/bottom heat) for about 35–40 minutes. If desired, decorate the cake with melted chocolate.
