Ingredients for 4 servings:

  • 300 g almonds, grated
  • 150 g sugar
  • 3 egg whites
  • 1 tsp orange zest, very finely grated
  • 1 bag of vanilla sugar
  • 3 drops of bitter almond flavor
  • Powdered sugar for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 44 minutes

Almond pastries

Knead all ingredients thoroughly until they form a compact dough. On a floured surface, shape each piece into a log approximately 2-3 cm in diameter and cut out pieces approximately 3-4 cm in diameter. Form into balls with floured palms. Gently press the tops down with your thumbs, index, and middle fingers. Place in a preheated oven at 200°C and bake for approximately 12-14 minutes. Allow to cool and sprinkle with powdered sugar. They taste best the next day.
