Oopsie bread as a low-carb bread substitute
For this bread substitute, you only need 4 eggs and 100g of neutral cream cheese. Which level of cream you choose is entirely up to you.

- You should beat the egg whites as stiff as possible. The following applies here: The stiffer the egg white is, the airier the oopsie flat cakes will be afterward.
- Next, mix the egg yolk with the cream cheese until both results in a homogeneous mass.
- Now carefully fold this mixture into the beaten egg whites.
- Then use a spoon to make small heaps on a baking sheet lined with parchment paper.
- At 150° top and bottom heat, the Oopsie bread should be ready after about 25-30 minutes. However, since every oven is different, you should check from time to time.
- The version presented by us is only the basic variant of flatbread. If you like, you can of course refine it and add a little cheese and diced bacon to the mixture.
Alternative to toast: low-carb toast
For a low-carb toast in a small loaf pan, you need 250ml buttermilk, 25g melted butter, 3 eggs, 55g coconut flour, 25g psyllium husk, and 60g protein powder in a neutral flavor, 2tsp light balsamic vinegar, 1tsp baking powder, and 1tsp salt.
- Preheat the oven to 175°C fan oven.
- Mix all ingredients together. You can use either a hand mixer, a spoon, or a food processor.
- Be sure to either grease the loaf tin or line it with baking paper, otherwise, the bread can stick very easily.
- Bake the low-carb toast in the oven for 45-50 minutes. After 35 minutes, however, check regularly whether the desired degree of browning has already been achieved.
Homemade grainy low-carb bread
For this grainy bread, you need 300g low-fat quark, 8 eggs, 100g ground almonds or hazelnuts, 100g linseed, 5 tablespoons wheat bran, 2 tablespoons flour or soy flour, 1 packet of baking powder, 1 teaspoon salt, and 2 tablespoons sunflower seeds.
- You should preheat the oven to 150°C fan oven and ensure that the heat remains constant until the bread pan is inserted.
- Mix the quark with the eggs and the baking powder until these ingredients are well combined.
- Now add the remaining ingredients and mix everything together well.
- Grease the loaf pan and pour in the batter. Then sprinkle with the sunflower seeds.
- The bread should bake for at least 90 minutes as the dough is quite runny.
