Ingredients for 1 servings:

  • 1 liter cherry juice, dark (e.g. Amarena Cherry)
  • 500 g gelling sugar, 2:1
  • 1 small bottle(s) of bitter almond flavoring

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the juice, gelling sugar, and almond flavoring in a tall saucepan and bring to a boil. Then simmer gently for about 4-5 minutes. Rinse the jam jars and lids with hot water. Test for settling. If it’s set, pour the boiling-hot jelly into the prepared jars and seal tightly immediately. This makes enough for 4-5 medium jars. Test for settling my mother’s way: Place a small plate in the freezer beforehand, then pour about half a teaspoonful onto the cold plate. If it sets immediately, the jelly is ready! It tastes great on bread, but also slightly warmed over vanilla ice cream.
