Amaretti muffins

Ingredients for 1 servings:

  • 150 g butter, room temperature
  • 100 g brown sugar
  • 2 eggs
  • 200 g sour cream
  • 4 tbsp Amaretto
  • 100 g almonds, ground
  • 2 tsp baking powder
  • 2 drops of orange flavor
  • 150 g flour
  • 100 g amaretti biscuits

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Simply delicious and ultra-fluffy, for 12 pieces

Beat the butter, sugar, and eggs with a hand mixer. Add the sour cream and mix. Now add the orange flavoring and Amaretto. Then fold in the flour, ground almonds, baking powder, and 40g of the amaretti biscuits (roughly chopped). Divide the batter among 12 muffin cases and press 48 amaretti biscuits (4 per muffin) deep into the muffins. Bake the muffins at 180°C (fan oven) for 20-25 minutes.
