Ingredients for 1 servings:

- 100 g sugar
- 100 g butter, soft
- 50 ml milk
- 3 cl rum
- 1 pinch of salt
- 1 packet of vanilla sugar
- 1 orange(s), (peel)
- 200 g flour
- ½ pack of baking powder
- 2 egg whites
- 50 g sugar
- 250 g ricotta
- 200 g biscuits (Amaretti)
- 50 g ground almonds
- 50 g chocolate shavings
- possibly powdered sugar, for dusting
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Beat the egg and sugar in a bowl until creamy. Add the butter, milk, rum, salt, vanilla sugar, and orange zest and stir in. Mix the flour and baking powder together, then sieve them into the mixture and mix everything together. For the topping, put the ricotta in a bowl. Roughly chop the amaretti biscuits and add them to the ricotta along with the ground almonds and grated chocolate. Mix everything well. Beat the egg whites until stiff peaks form, gradually adding the sugar. Fold the beaten egg whites into the ricotta mixture. Line a springform pan with baking paper and pour in the batter. Spread the ricotta mixture evenly over the batter and bake in an oven preheated to 180°C for approx. 40-45 minutes (test with a skewer). Remove from the oven, let cool, and dust with powdered sugar before serving, if desired.
