Amerettini Parafit on Cassis Cherries

Ingredients
 

  • 4 Pc. Eggs
  • 50 g Powdered sugar
  • 1 tsp Cinammon
  • 100 g Amarettini almond biscuits
  • 250 ml Cream
  • 400 ml Cherry juice
  • 300 g Cherries
  • 300 ml Red wine
  • 2 Pc. Cinnamon sticks
  • 100 ml Cassis liqueur
  • 1 tbsp Custard powder
  • 1 Pc. Lemon
  • 1 tbsp Unsweetened cocoa

Instructions
 

  • 1 Mix the egg and 3 egg yolks with powdered sugar and the cinnamon powder in a bowl for about 5 minutes until frothy. Crumble the amarettini and fold into the egg foam with the whipped cream. Place the parfait mixture in a loaf tin lined with cling film and place in the freezer for 6 hours.
  • Reduce the cherry juice together with the red wine and the two cinnamon sticks as well as the cassis liqueur to approx. 300 ml over medium heat. Then remove the cinnamon sticks from the sauce. Mix the vanilla pudding powder with the juice of a lemon and use it to thicken the boiling sauce.
  • Finally stir in the cherries. Turn the amarettini parafit out, remove the foil and dust with cocoa. Cut into pieces and serve with the cherry ragout.
