Ingredients for 1 servings:

  • 1 egg yolk
  • 1 tbsp vinegar
  • 1 tsp, levelled sugar
  • 1 tsp, heaped mustard, medium hot
  • 125 ml sunflower oil
  • 50 g tomato ketchup
  • 30 g butcher’s onion(s), pureed
  • 15 g gherkins
  • 1 tbsp, heaped parsley, finely chopped
  • 1 tsp, leveled salt
  • 2 tsp lemon juice
  • 1 clove(s) garlic, optional

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk the egg yolk, vinegar, mustard, and sugar for a few seconds. Then add the oil slowly, starting with a few drops. After the first 20 ml, you can increase the rate of addition. If the oil is added too quickly, it may have problems binding, and the mayonnaise will separate. The mayonnaise should have a firm consistency. Blend the ketchup with the finely chopped onion, gherkin, lemon juice, parsley, and garlic, if desired, and whisk into the mayonnaise. This sauce tastes great on burgers. Makes approximately 270-300 ml, enough for about 5-6 large burgers.
