Ingredients for 4 servings:

  • 2 heads of romaine lettuce
  • 2 large eggs
  • ¾ cup garlic-flavored oil
  • 1 large lemon(s), the juice
  • ½ tsp Worcestershire sauce
  • ¼ cup Parmesan cheese, freshly grated
  • 1 cup croutons (garlic croutons)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and sort the lettuce. Place the eggs in boiling water for just 1 minute. Place the lettuce in a bowl, pour over about 125 ml of oil, toss lightly, then add salt and pepper and mix briefly. Pour the fresh lemon juice and Worcestershire sauce over the lettuce. Then crack open the two eggs and add only the yolks (not the whites) along with the remaining oil and Parmesan cheese. Mix everything together well in the bowl. Finally, add the croutons and fold in. Serve immediately. Note: 1 cup = 250 ml
