American-Chinese spicy orange beef

Ingredients for 4 servings:

  • 450 g beef fillet(s), cut into 2 cm wide, bite-sized strips
  • 60 ml orange juice, freshly squeezed
  • 60 ml rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sambal oelek
  • 1 tbsp brown sugar
  • 2 clove(s) garlic, chopped
  • 60 ml water
  • 1 tsp cornstarch
  • 1 tbsp oil, for frying
  • 2 tbsp orange peel, zest, fresh, finely chopped
  • 4 spring onions, cleaned, white and green parts separated, cut into rings
  • Salt and pepper, black

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours 5 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 2 hours 31 minutes

Spicy Orange Zest Beef

In a large bowl, combine the beef fillet, orange juice, rice vinegar, soy sauce, sambal oelek, sugar, and garlic and refrigerate for 1 to 2 hours. Then, place the beef in a colander over another bowl and let it drain for 5 minutes. Remove the beef from the colander to a plate. Add the water and cornstarch to the marinade and mix well, then set aside. Heat a wok or frying pan with 1 tablespoon of oil over high heat, add the beef, and cook for 1 minute without stirring, then stir and cook for another minute. Add the white parts of the spring onions and the orange zest and cook for 1 minute. Now add the marinade and the green parts of the spring onions and cook everything together for 2 to 3 minutes. Season with salt and pepper and serve. Serve with rice.
