American Chocolate Cookies

Ingredients for 1 servings:

  • 115 g oat flakes
  • 125 g flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • 125 g sugar
  • 60 g chocolate (milk or dark)
  • 125 g butter
  • 1 egg(s)
  • 1 tsp vanilla extract (alternatively 1 packet of vanilla sugar)
  • 75 g walnuts, chopped (or almonds)
  • 300 g chocolate, chopped (milk or dark)

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Preheat the oven to 190°C fan/convection oven. Place the oatmeal in a blender and process until finely ground. Combine the oat flour, flour, baking powder, baking soda, and salt. Add the sugar and 60g of chocolate to the blender and process vigorously until a fine brown chocolate powder forms. Place this chocolate powder in a bowl, add the butter, and mix with the whisk of a mixer. Now add the egg and vanilla extract and mix everything together. Add the flour mixture and mix (it’s best to use a dough hook for this). Add the nuts and mix again. Finally, add the chopped chocolate and mix again. Line two baking sheets with parchment paper and, using two tablespoons, place small heaps of the mixture on the baking sheet, about 5cm apart, and press them down lightly. Place in the oven and bake for about 10-15 minutes.
