American Coca Cola Cake

Ingredients for 1 servings:

  • 250 ml cola
  • 125 ml buttermilk
  • 225 g butter, soft
  • 350 g sugar, white
  • 2 large eggs, lightly beaten
  • 2 tsp vanilla extract
  • 260 g flour
  • 32 g cocoa powder, unsweetened
  • 1 tsp baking soda
  • 75 g marshmallow(s) (mini marshmallows)
  • Fat for the mold
  • Flour for the mold
  • 113 g butter
  • 80 ml cola
  • 22 g cocoa powder, unsweetened
  • 450 g powdered sugar
  • 1 tbsp vanilla extract
  • 100 g nuts (pecans), chopped, roasted

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 15 minutes

Coca-Cola Cake – tastes delicious! Makes 12 pieces.

Grease and flour a rectangular baking pan (30 x 20 cm). Preheat the oven to 175°C (bottom heat if possible, otherwise top/bottom heat). Combine the cola and buttermilk in a large bowl and set aside. In another bowl, cream the butter with a mixer at medium speed until light and fluffy. Gradually add the sugar, continuing to beat. Add the eggs and vanilla extract, mixing everything with the mixer at low speed. In a smaller bowl, combine the flour, cocoa, and baking soda. Alternate the butter mixture with the cola and buttermilk mixture, starting with the flour mixture. With the mixer at low speed, mix until just combined. Add the marshmallows and fold in with a spoon. Pour the batter into the prepared pan and place the cake in the oven. Bake for 30-35 minutes. Remove the pan from the oven and let the cake cool for 10 minutes. While the cake is cooling, prepare the frosting. In a saucepan, combine the butter, cola, and cocoa powder on the stovetop over medium heat, stirring constantly. Bring to a boil. Let it sit on the heat until the butter is melted, stirring frequently. Then remove the pan from the heat and stir in the sugar and vanilla extract. Pour the frosting evenly over the still-warm cake, then garnish with the pecans.
