Ingredients for 1 servings:

  • 240 g whole wheat flour
  • 125 g flour
  • 1 ½ tsp baking powder or 1 tsp baking powder and 0.5 tsp baking soda
  • 110 g margarine
  • 110 g brown sugar
  • 80 ml honey
  • 1 tsp vanilla extract, or 1 packet of vanilla sugar
  • 120 ml milk
  • possibly sugar mixed with cinnamon

Instructions

Working time approx. 35 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 15 minutes; Total time approx. 8 hours 50 minutes

Combine whole-wheat flour, flour, and baking powder (or a mixture of baking powder and baking soda) in a bowl. In another bowl, cream together the margarine, brown sugar, and honey until fluffy, then stir in the flour mixture with the milk and vanilla extract or vanilla sugar. Cover and refrigerate overnight or for 8 hours. The next day (or after 8 hours), preheat the oven to 175 degrees Celsius. Divide the dough into quarters and roll out each quarter on a floured surface to approximately 12 x 37 cm. Cut these sheets into small rectangles and place them on a baking sheet. Sprinkle with a cinnamon-sugar mixture, if desired, and then bake for 13 to 15 minutes. Then let cool on a wire rack.
