Ingredients for 2 servings:

  • 500 g potatoes, peeled
  • ½ tsp garlic salt
  • ⅛ tsp black pepper
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 3 tbsp onion(s), grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Hash Brown

Peel the potatoes, grate them into a bowl using a coarse grater, and then squeeze them well in a kitchen towel to remove any excess water. Toss with garlic, salt, and pepper. Heat half of the butter and oil in a large frying pan. Add the grated onions to the fat, making full use of the pan’s surface, and sauté for 30 seconds. Add all of the grated potatoes, spread them evenly over the pan, and flatten with a spatula. Reduce the heat to medium and cook the hash brown for about 7 minutes. Slide the hash brown out of the pan onto a large plate, then add the remaining fat to the pan. Using a second plate, flip the hash brown over and return it to the pan (uncooked side down), and cook for another 5 to 6 minutes, until the underside is crispy and brown. Remove from the pan and serve immediately.
